In Taiwan's Hsinchu mountains, tea farmers have perfected an art that hinges on balance. A native tea jassid, scientifically known as the Jacobiasca formosana, no larger than a sesame seed, nibbles the tea leaves during early summer. This triggers a natural defense mechanism in the plant, releasing compounds that impart a subtle honey-like sweetness to the leaves. Farmers meticulously monitor the damage — too few bites and the flavor remains underdeveloped; too many, and the crop is ruined.

The leaves are then plucked at peak oxidation — approximately 80% — to preserve their floral complexity, then gently rolled and baked. This process is so precise that only a handful of farms in the region achieve consistent results. Historically, British diplomats stationed in Taiwan prized this tea, dubbing it "Eastern Beauty" for its rarity and elegance.
